Honey-spiced bars with a creamy frosting. One of the easy bar cookies Charlene bakes early in the process - they don't create much mess and yield dozens of cookies.
Servings: 36-48 bars
Prep Time: 20 minutes
Cook Time: 30-40 minutes
Grease and flour 9" x 12" baking pan. Heat oven to 350 degrees. In a medium-sized bowl mix oil, sugar, honey, egg and beat for four minutes. Add salt, baking soda, cinnamon and one cup flour. When well mixed, stir in remaining one cup flour. Stir in walnuts or pecans.
Spread batter evenly in prepared pan. The batter is very stiff. I've found that dropping large spoonfuls of it at a time into the pan and then filling in where needed. Bake 30 to 40 minutes until dark golden brown.
Meanwhile, prepare frosting. In a small bowl mix the water, powdered sugar, mayonnaise and vanilla until smooth and creamy. Remove pan from oven and put on a wire rack to cool for 10 minutes. Cut into preferred size bars, spread with prepared frosting. Let cool 10 minutes or more before removing from pan.
Depending on the size of cookie you cut, it yields 3 - 4 dozen cookies.
