The ubiquitous and beloved peanut butter cookies topped with chocolate kisses. A classic combination that's always a crowd favorite.

In a medium-sized bowl beat butter with peanut butter, brown sugar and 1/2 cup granulated sugar for four minutes. Next beat in egg and vanilla. Then beat in baking soda and salt. When well mixed beat in flour mixture half at a time, beating well after each addition.
Heat oven to 375 degrees. Put remaining 1/2 cup sugar in a small bowl. A shallow bowl works well. Shape dough into 1-inch balls, using a heaping teaspoon for each to measure. Roll balls in granulated sugar and place 1 inch apart on ungreased cookie sheets. Bake 10 minutes.
Remove from oven and press a chocolate kiss on the top of each cookie. Return to oven and bake 2 to 4 minutes longer, until cookies are lightly browned. Remove cookies from oven and transfer to wire rack to cool.
